polyols choice critical for nutritional bar acceptability

adding the polyol glycerol to a whey protein based nutritional bar maintains the soft texture and consumer acceptability of the product during storage, says a new study. other polyols, particularly propylene glycol, should not be used, as these lead to a hardening of intermediate-moisture foods like nutrition bars. these are food products with moderate moisture content that are shelf-stable without requiring refrigeration, according to findings published in the journal of agricultural and food chemistry . more

purecircle has announced it has entered into a partnership with cerilliant to develop and supply certified reference materials for its stevia-derived sweeteners, responding to demand for high quality reb a. the us food and drug administration (fda) issued letters of no objection to gras (generally recognized as safe) status for stevia-based reb a at 95 percent purity or above in december and since then, companies have been looking for ways to assure customers about the quality of their own brands of the sweetener. more

uk consumer watchdog questions functional foods

the influential uk-based consumer welfare advocate, which?, has poured scorn on some functional foods, despite the fact 59 per cent of its highly sceptical members buy omega-3, probiotic and other functional foods. in a mini-review of the £613m (€682m) uk omega-3, plant sterols/stanols and probiotics markets, which? said some products could deliver health benefits, but questioned some foods that possessed only low doses of functional ingredients. more

more firms make fsa southampton-free list

the uk’s food standards agency has added to its listing of companies that do not use the southampton-six colours, including cool drinks company, lakeland, montgomeryshire natural spring water products, plas farm ltd, rubicon drinks, and sunny delight beverage company. the colours were linked by a study at southampton university, published in the lancet in 2007, to hyperactivity in children. more
