cranberry waste may lead to alternative ingredients

cranberry pomace, a by-product of the juicing process, may be extruded to produce a range of polyphenol-rich ingredients for use in supplements or functional foods, says a new study. scientists from the us department of agriculture (usda) and the university of arkansas report that the flavonol content increased as a result of extrusion by between 30 and 34 per cent, but the anthocyanin content was detrimentally affected by the temperature. more

scientists at the nestlé research center studied the metabolism and bioavailability of coffee antioxidants and found that they have a long-lasting release in the blood, even up to 12-14 hours after consumption. the objective of the study was to quantify the amount of caffeic acid (ca) and ferulic acid (fa) equivalents in human blood plasma after coffee consumption. healthy adults consumed the equivalent of two cups of soluble coffee (4g of coffee dissolved in 400 ml of water). more

in an effort to curb rising obesity rates and encourage consumers to make healthier food choices, officials have proposed increasing taxes on unhealthy foods or offering subsidies for healthy foods. researchers at the university of buffalo tested the two tactics head-to-head via a simulated grocery store. they found that taxing foods deemed unhealthy (based on a calorie-for-nutrition value) was more effective for encouraging purchases of healthier items than lowering the cost of the healthy items themselves. more
