einkorn (triticum monococcum) wheat supplies more carotenoids than durum and bread wheats in finished food products, according to research evaluating carotenoid degradation during bread, biscuit and pasta manufacturing. the italian researchers, in a study published in food chemistry said that wheat, a major component of the human diet, is a source of lipophilic antioxidants, such as carotenoids and tocols, that inhibit lipid peroxidation of polyunsaturated fatty acids (pufa) in cell membranes and thus play a vital role in delaying several degenerative diseases. more

soy-biopolymer combination may extend encapsulation options

soybean lecithin coated with a biopolymer may provide an encapsulation technique for a range of ingredients, according to a study from an international team of researchers. ellagic acid, a polyphenol with antioxidant activity, was used as a test substance and encapsulated in a liposome made from soybean lecithin, which was subsequently coated in a biopolymer composed of chitosan and dextran sulphate, researchers report in the journal of functional food. more

health claims could impact natural perception

making a health claim on a product could lead consumers to think it is less natural and less tasty, according to a new study which also puts a dent in the so-called ‘healthy halo’. the new health claims regulation is shaking up the market for functional foods in europe. the european food standards agency (efsa) has shown itself to be demanding on the levels of science to back up claims, and so far a very small proportion of disease risk reduction claims proposed have received positive responses. more

fsa targets novel foods views

novel foods are high on the agenda in europe, as amendments to the original 1997 law are in the works. the uk’s fsa is planning an open event to gauge views and present its panel’s work. under the original novel foods regulation, foods and food ingredients that have no history of safe use in the eu before 15 may 1997 may not be place on the market before they have gone through an approvals process. more

monsanto patent not valid for soybean meal, ecj

the european court of justice has indicated that monsanto’s patent on roundup ready soybean seeds does not also cover processed soybean meal in the eu, say reports. the agri-giant filed a lawsuit against cefetra, a dutch soymeal importer from the netherlands, after three soymeal shipments were found to contain monsanto’s patented dna. according to reuters, annual trade of over €3bn in argentine soymeal is at stake. more

enjoying strawberries regularly can increase the body's antioxidant capacity, which may have heart, health and other benefits, according to a new study from ucla that was published in the journal of medicinal food. researchers studied 21 healthy women who ate about one-half pound of strawberries daily for three weeks. several measures of antioxidant capacity in the blood were taken. eating strawberries resulted in an increase in the body's ability to prevent the oxidation of blood lipids such as ldl cholesterol. more

consumers want fop labeling

eighty-six percent of consumers are interested in the government implementing objective front-of-pack labeling that calls out calories and beneficial nutrients such as vitamin d or fiber, according to a new survey by foodminds. the survey also found 77 percent of shoppers are interested in front-of-package labels designed to warn them of products with high calories, low nutrients, while 64 percent said if their favorite food had a warning label on it, they would either eat less or stop buying the product entirely. more

domestic food use of soybean oil is predicted to decline over the next two years and steady out in 2011-12, according to the new “usda agricultural projections to 2019” report. analysts forecast an annual increase after 2012 due to a growing population. the report predicts soybean plantings to decline over the next several years from the high level in 2009 as producer returns are reduced due to the influence of higher carryover stocks. more

reed’s and jones soda initiate merger

reed's, inc. (nasdaq: reed), and jones soda, inc. (nasdaq: jsda) have entered into a letter of intent (loi) for a merger that would bring together some leading premium soda brands, including reed's ginger brew, virgil's, and jones soda. while non-binding, the letter’s provisions indicate reed’s would acquire jones soda for a combination of cash and stock. however, under the binding provisions of the loi, reed's and jones soda have until april 5, 2010 to negotiate a definitive agreement on an exclusive basis. more
