hidden cameras show poor food safety

a study from north carolina state university has revealed that, even in kitchens that believe they are operating well, food safety violations are commonplace. the study, published in the journal of food protection, placed cameras in unobtrusive spots in eight volunteer commercial kitchens. where previous studies have relied on inspection results and self reporting, recordings show very different results “we found a lot more risky practices in some areas than we expected,” said lead researcher dr ben chapman. more

woolies shakes up milk contracts

woolworths has shaken up its milk supply, with a decision to award its own-label contracts to more than one supplier. the retailer today (8 june) confirmed that it had chosen to source milk from parmalat and murray goulburn and not just national foods, which had been its sole supplier of own-label milk since 2002. a spokesman for woolworths said the retailer had awarded its contract for queensland to italian dairy giant parmalat. more

denmark: arla makes job cuts at holstebro cheese dairy

dairy giant arla foods is to cut jobs at its cheese dairy in holstebro, denmark. the loss of 21 jobs, a spokesperson for arla told just-food today (9 june), are due to the company losing a private label contract in germany. “we had an adjustment of staff size in holstebro,” an arla spokesperson said. “we have a few dairies in that region, this one specialises in cream cheese. but due to a lost order on private-label cream cheese, until we regain market share, there will remain a reduction in production. more
