cargill completes sorini take-over

cargill has completed its buy out of a majority share in indonesian sorbitol producer sorini, which positions it to take greater advantages of sweetener and starch demand in emerging markets of asia. the agrifoods giant announced its plan to buy a majority stake in sorini on 15 december 2010. it now owns 85.01 per cent of the ordinary shares, and sorini becomes a subsidiary of cargill. more

clean label method developed for salt reduction in cheese and meat

scientists at nizo food research have worked with vion food group and frieslandcampina to develop a natural method of reducing salt levels in cheese and meat products. the pyramid approach to reducing salt in cheese and meat the sodium minus project has been running since 2008 and has already enabled the participating food manufacturers to reduce salt levels. frieslandcampina has been able to introduce milner cheese with 40 per cent less salt and vion food group has cut out 800 tonnes of salt from its gammon and bacon products in the uk. more

ec policy change on sugar could bring relief for bakers

the european commission, in a policy about face, said it may open the import quota or allow the sale of out-of-quota sugar into the bloc - a move that would bring relief for bakers and other food makers set to negotiate new sugar contracts. the move to consider additional imports contradicts previous statements from the commission, with it announcing plans in november to issue 350,000 tonnes of export licences for sugar, following on from the extra demand for exports it noted in autmun last year. more

a new european logo for local foods could help consumers identify products sold a short distance from their place of origin, says the dutch mep behind an opinion on professionalising local food systems to bolster regional economies and rebalance power in the food supply chain. the outlook opinion was prepared by the committee of the regions (cor) at the request of agriculture commissioner dacius cioloş as part of his consultation on the future of the cap, and adopted in plenary by the european parliament yesterday. more

relief for organic meat industry as ec calls off nitrate ban

major players in europe’s organic meat industry have expressed relief after the european commission (ec) chose not to ban the use of nitrates and nitrites for curing products. sodium nitrite (e250) and potassium nitrate (e252) are widely used in cured meats to prevent the growth of pathogens such as clostridium botulinum, the bacterium responsible for botulism, and add flavour and colour to products such as bacon. more

children’s knowledge and consumption of fast food has a significant impact on their palate and preference for foods that are high in added sugars, salt and fats, according to new research. the findings, published online in the journal appetite suggest that children with detailed mental representations of fast food and soda brands – as developed by advertising and experience – have higher scores on an ‘added flavour’ sugar/fat/salt (sfs) liking palate. more

bagel factory worker severs fingers in machinery

a uk-based bagel bakery has been fined after a worker severed two of his fingers in “ unsafe” machinery while attempting to clear a dough blockage. the firm, ixxy\'s bagels, of harley street, london, was ordered to pay £2,250 with £9,719 costs for the november 2007 incident. the court heard that mr raakesh patel, 26, was injured at the ixxy\'s factory when a rotating blade of a bagel dividing machine continued to move even when the rear doors were opened. more

research hails chitosan antimicrobial coating potential in curbing listeria

chitosan-based edible coatings and films have real promise in combating listeria monocytogenes (lm) in cold-smoked salmon, according to new research. the study by haiqiang chen et al, published in the journal of food science, found that use of chitosan , particularly when used in coating s, was able to inhibit the growth of lm and could potentially be an effective tool for the fish processing sector in efforts to tackle the bacteria. more

aussie consumer confidence stumbles

in a reversal of fortune to the previous quarter (september 2010), aussie confidence ended 2010 with a slight fall as consumers looked to curb expenditure in the wake of rising utility and food costs. fourth quarter (december 2010) results from nielsen’s global online consumer survey show that the australian consumer has slightly lost their confidence, as a conservative drop of three points takes the consumer confidence index score to 112 points. more
