the european food industry is in discussions over establishing a roundtable on sustainable production and consumption throughout the food chain, and is inviting input from the czech presidency. the idea for a food chain sustainable consumption and production (scp) roundtable was a major talking point at the ciaa congress in brussels in november (confederation of the food and drink industries of the eu). more

comparative cost of enzymes is boon to novozymes

the high cost of inputs that has dogged the food industry in recent times looks to have helped raise the profile of enzymes as cheaper alternatives to other ingredients, according to novozymes’ annual report. the enzyme specialist yesterday reported total annual sales of dkk 8146m (c €1093m at today’s exchange rates) for full year 2008, growth of 13 per cent in local currencies. more

natural extract matches synthetics for meat preservation

polyphenol-rich extracts from grape seed have potential as a natural antioxidant in meat patties, reducing rancidity but not affecting the colour of the meat, says a new study. adding 0.02 per cent of the extract to ground pork meat reduced the lipid oxidation in processed meat that can lead to the formation of off-odours associated, says the research published in the journal of food science . more

whey protein promises nano-encapsulation of omega-3

the whey protein beta-lactoglobulin may spontaneously bind the omega-3 fatty acid docosahexaenoic acid (dha) and offer nano-encapsulation potential for formulators. israeli researchers report that the whey protein may be a nano-vehicle for dha, and nano-complexes with pectin produced transparent dispersion with extended shelf-life for the ingredient. they report their results in an upcoming issue of food hydrocolloids . more

euro ‘cow tax’ talk is all hot air – says eda

ongoing talks in the us over a potential tax on methane emissions from dairy cows and other livestock farming is unlikely to be rolled-out globally and would not be welcomed within european dairy, according to one industry expert. doctor joop kleibeuker, secretary general of the european dairy association (eda) claimed that cutting the environmental impacts of processing and supply were a major aim for the industry, with a lot of work was already going on at farm level. more

study shows antimicrobial effective against listeria in soft cheese

enterococcus faecium whe 81, a multi-bacteriocin producer, is effective as an antimicrobial against listeria monocytogenes in munster cheese, a red smear soft cheese, according to a french study. the authors of the study, which was published in the journal food microbiology, said that it is well established that soft cheese is amongst the products that pose the highest risk with regard to human listeriosis. more

czechs feel liberalising effect of eu food laws

the implementation of european union food regulations into czech law is benefiting the country’s food supplements and functional foods markets, according to a czech trade association. the czech association of special foods (casf) said decrees that recently transposed the traditional herbal medicinal products directive (thmpd) and functional foods regulations, meant many products were more widely available, accompanied by recommended intakes that previously did not exist. more

danisco spies opportunities in xylitol health claim

danisco has welcomed the approval of a ‘very strong’ health claim that xylitol chewing gum reduces the risk of caries in children, saying it now puts its customers in a strong position. while all sugar-free gums can claim not to promote tooth decay, the health claim, approved by the european food safety authority under article 14 of the new health claims regulation, positions those containing xylitol as the only ones that can actually a make caries risk reduction claims. more
