"in circumstances like these, it is imperative that we recognise the issues our customers face and make the necessary resources available to meet their needs," says torben wiborg jensen, application director at danisco. bakery and brewing are two of the main food sectors affected by the forecasted price rise due to their high dependence on, particularly, wheat and barley. maximising flour strength for bakers, danisco's powerbake™ range reflects the need to maximise baking performance by optimising flour of varying quality. "powerbake™ comprises enzymes and enzyme-emulsifier blends developed to raise and optimise the baking performance of standard and poor quality flour, enabling bakers to cut their raw material costs," says inge lise povlsen, bakery group manager. "our solutions also maximise the baking properties of flour produced at a higher extraction rate, which means a higher content of bran." in view of the strong link between wheat and gluten prices, bakers' interest in gluten replacement and reduction is expected to increase. proven solutions from the powerbake™ range can cut gluten addition in white and wholemeal bread by up to 75% at no expense to bread quality. high-yield brewing following the dramatic rise of commodity prices in 2007, many breweries made permanent cost-reducing alterations to their formulations. the prospect of higher prices in 2010 renews the focus on danisco's value-improving brewing enzymes. "high malt prices make a good case for malt replacement by cheaper starch-containing grains, such as barley or maize. this is where our amylex® and alphalase® enzymes make a difference," states lars boe larsen, brewing group manager. "with our laminex® range, brewers are assured a consistent, high-yield process when using raw materials of varying quality without affecting the quality of the final beer." for additional value for money, brewers can choose various enzymes from danisco's diazyme® range to boost attenuation.
