follow food safety throughout the food chain

worried about where your food comes from and whether it’s safe to eat? well, if you take a big ‘bite’ of the agency’s quarterly magazine we hope you’ll find some reassurance about how much is being done to safeguard your food from the time it enters the uk until it is on your dinner plates. the latest issue of bite will take you on a step-by-step journey through the food chain, highlighting the food safety checks carried out by staff at port health authorities, by food manufacturers supplying shops throughout the uk and by the retailers on our high streets. other articles describe some of the work carried out by the agency and its partners to ensure high standards of food safety and transparency in small food businesses and caterers throughout the uk. and we look at some of the research undertaken behind the scenes to tackle foodborne disease and ensure that the amount of contaminants in our food is at an absolute minimum. to continue to protect the foodchain, food safety agencies must always aim to improve their performance and try to anticipate emerging food safety risks, and to this end we include summaries of some of the speeches made at the recent future food hygiene conference organised jointly by the food standards agency and the chartered institute of environmental health.
